A comforting and hearty sausage potato soup that’s perfect for chilly evenings and meal prep.
Ingredients
- 1 lb sausage
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the onion and garlic, and sauté until softened.
- Stir in the diced potatoes and chicken broth, and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with chopped parsley.
Notes
Choose your favorite type of sausage and consider adding herbs for extra flavor. For a thicker soup, mash some of the potatoes.
