A hearty and creamy soup packed with flavor, perfect for cold days and busy weeknights.
Ingredients
- 1 lb ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional toppings: green onions, additional cheese
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until fragrant.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in diced potatoes and beef broth, bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
- Stir in heavy cream and shredded cheddar cheese. Cook until cheese is melted and soup is creamy.
- Season with salt and pepper to taste.
- Serve hot with optional toppings.
Notes
For a thicker soup, mash some of the potatoes before adding the cream and cheese. You can also use ground turkey or beans for a healthier version.
