Description

A hearty and creamy soup packed with flavor, perfect for cold days and busy weeknights.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional toppings: green onions, additional cheese


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add ground beef and cook until browned, breaking it up with a spoon.
  4. Stir in diced potatoes and beef broth, bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
  5. Stir in heavy cream and shredded cheddar cheese. Cook until cheese is melted and soup is creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot with optional toppings.

Notes

For a thicker soup, mash some of the potatoes before adding the cream and cheese. You can also use ground turkey or beans for a healthier version.
