Description

Ingredients

  • 1 lb beef short ribs
  • 8 oz Mexican chorizo
  • 1 can fire-roasted tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can kidney beans, drained and rinsed


Instructions

  1. In a large pot, brown the beef short ribs and chorizo over medium heat.
  2. Add onion, garlic, and bell pepper, and sauté until softened.
  3. Stir in chili powder, cumin, salt, and pepper.
  4. Add fire-roasted tomatoes and beef broth, bringing to a simmer.
  5. Cook for 1-2 hours until beef is tender.
  6. Stir in kidney beans and heat through.
  7. Serve hot.

Notes

For extra heat, add diced jalapeños or cayenne pepper. Let the chili sit after cooking for better flavor melding. For a thicker chili, mix in cornstarch dissolved in water during the last 10 minutes of cooking.
