Ingredients

3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3/4 teaspoon granulated garlic or garlic powder
1 cup grated sharp cheddar cheese
3/4 cup grated zucchini
2 tablespoons chopped chives (or fresh parsley)
3 tablespoons honey
12 ounces non-alcoholic beer (or evaporated milk)
3 tablespoons melted butter (or plant-based butter)


Instructions

Whisk 3 cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and 3/4 teaspoon granulated garlic in a medium bowl
Fold in 1 cup cheddar cheese, 3/4 cup zucchini, and 2 tablespoons chopped chives
Drizzle 3 tablespoons honey over mixture
Gradually pour in 12 ounces non-alcoholic beer, stirring continuously
Add melted butter and mix until just combined
Grease a 9″x5″ loaf pan with 1 tablespoon butter
Transfer batter to pan, smooth the surface, then brush with remaining melted butter
Bake at 350°F (175°C) for 55-70 minutes
Let cool in pan for 10-15 minutes before slicing
