A refreshing salad bursting with flavors of cucumber, cherry tomatoes, and lemon, perfect for summer gatherings.
Ingredients
- 1 cup orzo pasta
- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and parsley.
- Once the orzo is cool, add it to the vegetable mixture.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If using, sprinkle with feta cheese before serving.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For optimal freshness, store any leftovers in an airtight container in the refrigerator. The salad can be kept for up to 3 days.
