Description

Delightful holiday cookies that combine the sweetness of white chocolate with refreshing peppermint.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 large eggs
  • 1 cup white chocolate chips
  • 1 cup peppermint chips
  • Crushed peppermint candies for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the eggs, vanilla extract, and peppermint extract until well incorporated.
  4. Gradually blend in the flour mixture until combined. Stir in the white chocolate chips and peppermint chips.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them a few inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Remove from oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
  7. Optional: Sprinkle crushed peppermint candies on top of warm cookies for added festive flair.

Notes

For a richer flavor, you can substitute dark chocolate chips for white chocolate. Store in an airtight container for up to a week.
