Description

A fresh and light dish that features shredded chicken, crisp vegetables, and fragrant herbs, perfect for an appetizer or light meal.


Ingredients

  • Rice paper wrappers
  • Cooked chicken breast, shredded
  • Lettuce leaves
  • Fresh herbs (mint, cilantro)
  • Carrots, julienned
  • Cucumber, julienned
  • Dipping sauce (peanut or hoisin)


Instructions

  1. Prepare all the filling ingredients by shredding the chicken and cutting the vegetables.
  2. Soak a rice paper wrapper in warm water for about 10 seconds or until soft.
  3. Place the softened wrapper on a clean surface.
  4. Layer some lettuce, chicken, herbs, carrots, and cucumber in the center of the wrapper.
  5. Fold the sides over the filling, then roll up tightly from the bottom to form a spring roll.
  6. Repeat with the remaining wrappers and fillings.
  7. Serve with dipping sauce.

Notes

Make filling ingredients ahead of time. Serve fresh for the best flavor.
