Ingredients
- Rice paper wrappers
- Cooked chicken breast, shredded
- Lettuce leaves
- Fresh herbs (mint, cilantro)
- Carrots, julienned
- Cucumber, julienned
- Dipping sauce (peanut or hoisin)
Instructions
- Prepare all the filling ingredients by shredding the chicken and cutting the vegetables.
- Soak a rice paper wrapper in warm water for about 10 seconds or until soft.
- Place the softened wrapper on a clean surface.
- Layer some lettuce, chicken, herbs, carrots, and cucumber in the center of the wrapper.
- Fold the sides over the filling, then roll up tightly from the bottom to form a spring roll.
- Repeat with the remaining wrappers and fillings.
- Serve with dipping sauce.

Make filling ingredients ahead of time. Serve fresh for the best flavor.
