Ingredients
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 1 cup Arborio rice
- 4 cups vegetable broth, warmed
- 1 tablespoon fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup Gruyère cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat the oven to 400°F and position a rack in the middle.
- Sauté the onion in olive oil and butter until translucent; add garlic and cook until fragrant.
- Cook the mushrooms in the skillet until browned and their liquid has evaporated.
- Toast the rice in the butter, stirring until coated and slightly translucent.
- Deglaze the pan with white wine, scraping up browned bits until evaporated.
- Combine the rice and mushrooms; add warmed vegetable broth, thyme, parsley, salt, and pepper. Simmer gently.
- Bake covered for 25-30 minutes, until most liquid is absorbed.
- Create the cheesy crust by adding remaining cheeses on top of the baked dish.
- Final bake uncovered for 10-15 minutes until cheese is melted and golden brown. Let it rest before serving.
