Description

Delightful cookies resembling watermelon slices, perfect for summer gatherings.


Ingredients

  • 1 cup sugar
  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup almond flour (for decoration)
  • Green and red icing (for decoration)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the sugar and butter until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. Combine flour and baking powder, then add to the creamed mixture and mix well.
  5. Roll the dough into balls and flatten slightly. Place them on a baking sheet.
  6. Bake for 8-10 minutes, until lightly golden.
  7. Let cool and decorate with green icing as the rind and red icing for the watermelon part.

Notes

Chilling the dough helps maintain its shape during baking.
