Delightful cookies resembling watermelon slices, perfect for summer gatherings.
Ingredients
- 1 cup sugar
- 1 cup butter, softened
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup almond flour (for decoration)
- Green and red icing (for decoration)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the sugar and butter until smooth.
- Beat in the eggs, one at a time, then stir in the vanilla.
- Combine flour and baking powder, then add to the creamed mixture and mix well.
- Roll the dough into balls and flatten slightly. Place them on a baking sheet.
- Bake for 8-10 minutes, until lightly golden.
- Let cool and decorate with green icing as the rind and red icing for the watermelon part.
Notes
Chilling the dough helps maintain its shape during baking.
