Ingredients
- 2 cups rolled oats
- 1.5 cups flour
- 0.75 cup brown sugar
- 0.5 tsp baking soda
- 0.25 tsp salt
- 0.75 cup butter (melted)
- 2 cups strawberries (chopped)
- 0.33 cup sugar
- 1 tbsp lemon juice
- 2 tsp cornstarch
Instructions
- Preheat your oven to 180°C (350°F) and line a baking pan with parchment paper for easy removal later.
- Combine oats, flour, brown sugar, baking soda, and salt in a large mixing bowl. Stir until well mixed.
- Pour in the melted butter and mix until the mixture is crumbly and resembles wet sand.
- Press about two-thirds of the mixture into the bottom of the prepared baking pan to form the base layer.
- Mix the chopped strawberries with sugar, lemon juice, and cornstarch in another bowl until well combined.
- Spread the strawberry filling evenly over the oat base, ensuring it covers all areas.
- Top the strawberry mixture with the remaining crumbly oat mixture.
- Bake in the preheated oven for 35 to 40 minutes or until golden brown and fragrant.
- Allow the bars to cool completely before slicing into squares.

Allowing your bars to cool completely will help them slice neatly. Use fresh strawberries for the best flavor.
