A delightful casserole combining roasted sweet potatoes with maple syrup, brown sugar, and topped with mini marshmallows and pecans, perfect for holiday meals.
Ingredients
- 4 cups roasted sweet potatoes
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups mini marshmallows
- 1/2 cup chopped pecans
- 2 tablespoons maple syrup (for topping)
- 1 tablespoon coconut oil or vegan butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the roasted sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg.
- Mash the mixture until desired consistency is reached (chunky or smooth).
- Spread the sweet potato mixture into a greased baking dish.
- Top with mini marshmallows and a mixture of chopped pecans and maple syrup.
- Bake in the preheated oven for 25-30 minutes or until heated through and the marshmallows are golden brown.
- Serve warm as a delicious side dish during the holidays.
Notes
For a smoother texture, mash the sweet potatoes well. Adjust sweetness by adding more or less maple syrup and brown sugar based on your taste. Can be made vegan with coconut oil or vegan butter.
