Delightful Soft and Moist Banana Muffins made with ripe bananas and chocolate chips, perfect for breakfast or a snack.
Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, and mix until well combined.
- Gradually add the flour and fold until just combined; do not overmix.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for best flavor, avoid overmixing for light muffins, and consider adding nuts or spices for extra flavor.
