A hearty one-pot meal combining tender turkey kielbasa sausage with fluffy potatoes and creamy cheesy goodness, effortlessly cooked in the slow cooker for a weeknight-friendly dinner.
Ingredients
32 oz frozen hash browns (or 3-4 lbs fresh potatoes, diced)
14 oz turkey kielbasa sausage, cut into 1/2-inch pieces
1 small onion, finely diced
2 1/2 cups shredded cheddar cheese (divided)
10.5 oz can cream of mushroom soup (pork-free)
1/2 cup sour cream (or dairy-free alternative)
1 tsp Creole seasoning
Salt and pepper to taste
Optional: 1/4 cup flour (to thicken the base)
Instructions
Heat a skillet over medium heat; cook turkey kielbasa until browned, then drain excess fat.
Add cooked sausage, hash browns, diced onion, Creole seasoning, salt, and pepper to the slow cooker.
Stir in cream of mushroom soup and sour cream until well combined.
Sprinkle half the cheddar cheese over the mixture.
Cover and cook on low for 4-6 hours, or until potatoes are tender.
Top with remaining cheese and let rest 10 minutes before serving.
Notes
Use pork-free kielbasa (turkey or beef). Check soup label for pork content.
Fresh potatoes require 15-20 minutes longer slow cooking.
Optional: Add flour to the soup mixture to create a thicker base.
