Ingredients
Boneless Beef Chuck Roast (1.5 pounds), cut into ½-inch strips
Low-Sodium Beef Broth (1 cup)
Low-Sodium Soy Sauce (½ cup)
Dark Brown Sugar (¼ cup)
Sesame Oil (1 tablespoon)
Minced Garlic (3 teaspoons, ~3 cloves fresh)
Cornstarch (2 tablespoons, mixed with 3 tablespoons water)
Fresh Broccoli (1.5 pounds), cut into florets
Optional: Toasted Sesame Seeds for garnish
Instructions
1. Sauté garlic in a pan with a dollop of cornstarch (optional step to deepen flavor)
2. Place beef strips in the slow cooker
3. Add soy sauce, broth, brown sugar, sesame oil, and sautéed garlic
4. Stir to coat beef
5. Cover and cook on Low for 3-4 hours until beef is tender
6. Add broccoli during the last 1 hour of cooking
7. In the final 30 minutes, mix cornstarch slurry into sauce to thicken
8. Simmer briefly to desalt sodium if using regular soy sauce

Marinating beef in soy sauce for 30 minutes enhances flavor.
Use sirloin or flank steak if preferred, but adjust cooking time.
Brown sugar can be replaced with maple syrup (1:1 ratio).
