Ingredients

4 boneless, skinless chicken breasts (1/2-inch thickness)
2 tablespoons olive oil
1 1/2 teaspoons Italian seasoning (contains basil, oregano, thyme)
1/2 cup balsamic vinegar
1 1/2 tablespoons brown sugar
8 ounces fresh mozzarella, sliced
6-8 cherry tomatoes, halved
Fresh basil leaves, for garnish


Instructions

Preheat grill or grill pan to medium-high heat
In a bowl, mix Italian seasoning with 1 tablespoon olive oil until damp
Brush chicken breasts on both sides with the seasoned oil
Grill chicken for 4-5 minutes per side until golden-brown and cooked through
In a saucepan, combine balsamic vinegar and brown sugar
Simmer over medium heat for 8-10 minutes until thickened into a glaze
