A quick and comforting Italian pasta dish made with garlic, olive oil, and red pepper flakes. Perfect for busy weeknights!
Ingredients
- Spaghetti
- 4-6 cloves garlic, sliced thin
- 1/4 cup extra virgin olive oil
- 1 tsp red pepper flakes
- Salt
- Fresh parsley, chopped (optional)
- Zest or juice of 1 lemon (optional)
- Grated Parmesan or Pecorino (optional)
Instructions
- Boil pasta in well salted water until just tender. Save about 1 cup of pasta water before draining.
- While the pasta cooks, warm olive oil in a large pan over medium low heat. Add sliced garlic and red pepper flakes. Stir often.
- When the garlic turns pale golden, add a splash of pasta water to calm it down and prevent burning.
- Add drained spaghetti to the pan. Toss and add more pasta water a little at a time until the noodles look glossy and lightly sauced.
- Finish with parsley, lemon, and cheese if desired.
Notes
Keep the garlic at medium low heat to avoid burning. Save pasta water for a more cohesive sauce.
