Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound small potatoes, halved
- 1 pound corn on the cob, cut into pieces
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tablespoons Old Bay seasoning
- 1 lemon, sliced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the potatoes, corn, olive oil, garlic, Old Bay seasoning, salt, and pepper in a large sheet pan. Toss to coat.
- Arrange the shrimp and lemon slices on top of the vegetable mixture.
- Roast in the preheated oven for about 20-25 minutes, or until the shrimp are pink and cooked through.
