Description

A fresh, filling salad with quinoa, black beans, and vibrant flavors of lime and avocado.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup fresh corn (or frozen and thawed)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped (optional)
  • 1 avocado, chopped
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon cumin or chili powder (optional)


Instructions

  1. Cook your quinoa with 1 cup dry quinoa and 2 cups water. Bring to a boil, then lower heat, cover, and cook for about 15 minutes until water is gone. Let sit for 5 minutes and fluff with a fork.
  2. Rinse and drain the black beans.
  3. Chop the tomatoes, onion, avocado, and cilantro (if using).
  4. Mix the dressing in a bowl with olive oil, lime juice, salt, pepper, and cumin.
  5. Toss everything together gently, adding the avocado last to keep it intact.

Notes

Let the quinoa cool before adding avocado to prevent it from mashing. Can be served as a main dish or side.
