Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup pink lemonade concentrate
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon pink lemonade concentrate (for glaze)
  • 1-2 tablespoons milk (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the softened butter and powdered sugar until light and fluffy.
  3. Mix in the flour, salt, vanilla extract, lemon zest, and pink lemonade concentrate until a dough forms.
  4. Roll the dough into balls and place them on the prepared baking sheet.
  5. Use your thumb to make an indentation in the center of each cookie.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. While cookies cool, prepare the glaze by mixing powdered sugar, pink lemonade concentrate, and milk until smooth.
  8. Fill each cookie indentation with the glaze. Let set before serving.

Notes
