Ingredients
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1/4 cup pink lemonade concentrate
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon pink lemonade concentrate (for glaze)
- 1-2 tablespoons milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the softened butter and powdered sugar until light and fluffy.
- Mix in the flour, salt, vanilla extract, lemon zest, and pink lemonade concentrate until a dough forms.
- Roll the dough into balls and place them on the prepared baking sheet.
- Use your thumb to make an indentation in the center of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- While cookies cool, prepare the glaze by mixing powdered sugar, pink lemonade concentrate, and milk until smooth.
- Fill each cookie indentation with the glaze. Let set before serving.
Notes
Use fresh lemon zest for a brighter flavor. To store, keep in an airtight container for up to one week.
