Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)
  • 2 cups all-purpose flour (or gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can canned pineapple rings, well-drained
  • 2 tablespoons additional sugar for sprinkling


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract (if using) until well combined.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Shape the dough into small balls, about 1 inch in diameter.
  7. Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Press a pineapple ring into the center of each cookie dough ball.
  9. Sprinkle a little sugar on top of each pineapple ring.
  10. Bake for 12-15 minutes, or until the edges are lightly golden.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
