Description

A delightful twist on the traditional pineapple upside-down dessert, these cookies deliver a burst of tropical flavor in a chewy form.

Ingredients

  • ½ cup Unsalted Butter, softened
  • ¾ cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 ¼ cups All-Purpose Flour
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Brown Sugar
  • 2 tbsp Melted Butter
  • 1 small can Pineapple Rings, cut into smaller pieces
  • Maraschino Cherries, halved

Instructions

  1. Prepare the Cookie Dough: In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually mix in the all-purpose flour, baking powder, and salt until just combined.
  2. Prepare the Topping: In a separate bowl, combine the brown sugar and melted butter. Pour this mixture evenly into the bottom of your prepared cookie sheet. Scatter the cut pineapple pieces on top and place halved maraschino cherries amongst the pineapple.
  3. Assemble the Cookies: Spoon rounded tablespoons of the cookie dough over the pineapple and cherry topping, ensuring to cover them as much as possible.
  4. Bake the Cookies: Preheat your oven to 350°F (175°C) and bake the cookies for 12-15 minutes or until they are golden brown and slightly firm to the touch. Allow the cookies to cool for a few minutes before inverting them onto a cooling rack.
  5. Serve and Enjoy: Once cooled, you can serve them warm or at room temperature. Enjoy your delicious Pineapple Upside-Down Cookies with friends and family!

Notes

For best results, ensure butter is softened, consider using parchment paper to prevent sticking, and adjust baking time for fresh pineapple.
