Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup chopped pecans
  • 1/2 cup light corn syrup
  • 1/4 cup brown sugar

  4. Add the eggs one at a time, mixing after each addition until just incorporated.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Combine chopped pecans, corn syrup, brown sugar, cinnamon, and salt for the topping. Stir until well mixed.
  7. Spoon the pecan mixture over the cheesecake filling.
  8. Bake in the preheated oven for about 45-50 minutes, or until the center is set.
  9. Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.

Notes

For best flavor and texture, chill overnight before serving. Consider garnishing with whipped cream and extra chopped pecans.
