Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup chopped pecans
- 1/2 cup light corn syrup
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- Mix the graham cracker crumbs and melted butter until combined, then press the mixture firmly into the bottom of the prepared pan.
- Beat cream cheese in a large mixing bowl until smooth. Add in the granulated sugar and vanilla, mixing until well combined.
- Add the eggs one at a time, mixing after each addition until just incorporated.
- Pour the cream cheese mixture over the crust in the springform pan.
- Combine chopped pecans, corn syrup, brown sugar, cinnamon, and salt for the topping. Stir until well mixed.
- Spoon the pecan mixture over the cheesecake filling.
- Bake in the preheated oven for about 45-50 minutes, or until the center is set.
- Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
