Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons milk
  • Gel food coloring (pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for the filling)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for the filling)
  • Pinch of salt (for the filling)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the cookie dough by creaming the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully integrated.
  4. Combine the dry ingredients in a separate bowl, then gradually add them to the wet mix.
  5. Color the dough by dividing it into five portions and using gel food coloring.
  6. Shape each cookie dough portion into 1 tablespoon balls and space them on the baking sheet.
  7. Bake for 8-10 minutes until edges are set.
  8. Make the vanilla filling by beating the butter and gradually adding powdered sugar, cream, vanilla, and salt.
  9. Assemble the cookie sandwiches with the filling between two cookies, then let them sit for 10 minutes before serving.
