Description

A delightful dish combining salmon and a creamy Parmesan sauce with sun-dried tomatoes and fresh spinach.


Ingredients

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper.
  2. Place the salmon in the skillet, skin side down. Cook for about 4-5 minutes per side or until cooked through. Remove and set aside.
  3. In the same skillet, add heavy cream, Parmesan cheese, and sun-dried tomatoes. Stir until the cheese is melted and the sauce is smooth.
  4. Add the fresh spinach and cook until wilted.
  5. Return the salmon to the skillet and spoon the sauce over the top.
  6. Serve garnished with fresh basil if desired.

Notes

For a refreshing twist, add lemon juice and zest to the sauce. You can also substitute spinach with kale or arugula.
