A delightful dish combining salmon and a creamy Parmesan sauce with sun-dried tomatoes and fresh spinach.
Ingredients
- 2 salmon fillets
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper.
- Place the salmon in the skillet, skin side down. Cook for about 4-5 minutes per side or until cooked through. Remove and set aside.
- In the same skillet, add heavy cream, Parmesan cheese, and sun-dried tomatoes. Stir until the cheese is melted and the sauce is smooth.
- Add the fresh spinach and cook until wilted.
- Return the salmon to the skillet and spoon the sauce over the top.
- Serve garnished with fresh basil if desired.
Notes
For a refreshing twist, add lemon juice and zest to the sauce. You can also substitute spinach with kale or arugula.
