Ingredients
- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the potatoes with olive oil, Parmesan cheese, garlic powder, Italian herbs, salt, and pepper until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 25-30 minutes, turning halfway through, until the potatoes are tender and golden brown.
- Garnish with fresh parsley if desired and serve hot.
Notes
For an extra crispy finish, broil the potatoes for a minute or two at the end of baking. Use freshly grated Parmesan for enhanced flavor.
