Description

A simple and flavorful side dish with a crispy exterior and soft interior, enhanced by Parmesan cheese and garlic.


Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the potatoes with olive oil, Parmesan cheese, garlic powder, Italian herbs, salt, and pepper until well coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, turning halfway through, until the potatoes are tender and golden brown.
  6. Garnish with fresh parsley if desired and serve hot.

Notes

For an extra crispy finish, broil the potatoes for a minute or two at the end of baking. Use freshly grated Parmesan for enhanced flavor.
