A delicious One-Pan Balsamic Chicken dish featuring tender chicken, vibrant veggies, and a rich balsamic glaze, perfect for quick weeknight dinners.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- In a large bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
- Add the chicken breasts to the marinade and let sit for at least 30 minutes.
- Preheat a large skillet over medium-high heat.
- Remove the chicken from the marinade (reserve the marinade) and add to the skillet. Cook for about 5-7 minutes on each side, until the chicken is cooked through.
- Add cherry tomatoes and spinach to the skillet, pouring the reserved marinade over the top.
- Cook for an additional 5 minutes until the spinach is wilted and the sauce thickens slightly.
- Serve warm.
Notes
