Description
Delightfully chewy cookies combining peanut butter, chocolate chips, and old-fashioned oats.
Ingredients
- 3/4 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1/2 cup unsalted butter (room temperature)
- ½ cup brown sugar (firmly packed)
- ½ cup granulated sugar
- ½ cup creamy peanut butter
- ½ teaspoon pure vanilla extract
- 1 large egg
- 2 cups old-fashioned rolled oats
- 1 cup chocolate chips
Instructions
- In a medium size bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Cream the butter and both sugars together on medium-high speed for 3-5 minutes.
- Add the peanut butter, vanilla, and egg; mix until well combined.
- With the mixer on low, add the flour mixture and blend until just combined.
- Fold in the oats and chocolate chips.
- Chill the cookie dough in the refrigerator for 45 minutes to 1 hour.
- Preheat your oven to 350°F (175°C).
- Prepare baking sheets lined with a silicone mat or parchment paper.
- Using a cookie scoop, place dough on the sheets, spacing them 2 inches apart.
- Bake for 12-15 minutes, until edges are lightly browned, and flatten the tops slightly.
- Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Notes
For a twist, you can add nuts or dried fruits. Chill dough for better cookie shape.
