Description

Delightfully chewy cookies combining peanut butter, chocolate chips, and old-fashioned oats.


Ingredients

  • 3/4 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • ½ cup brown sugar (firmly packed)
  • ½ cup granulated sugar
  • ½ cup creamy peanut butter
  • ½ teaspoon pure vanilla extract
  • 1 large egg
  • 2 cups old-fashioned rolled oats
  • 1 cup chocolate chips


Instructions

  1. In a medium size bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. Cream the butter and both sugars together on medium-high speed for 3-5 minutes.
  3. Add the peanut butter, vanilla, and egg; mix until well combined.
  4. With the mixer on low, add the flour mixture and blend until just combined.
  5. Fold in the oats and chocolate chips.
  6. Chill the cookie dough in the refrigerator for 45 minutes to 1 hour.
  7. Preheat your oven to 350°F (175°C).
  8. Prepare baking sheets lined with a silicone mat or parchment paper.
  9. Using a cookie scoop, place dough on the sheets, spacing them 2 inches apart.
  10. Bake for 12-15 minutes, until edges are lightly browned, and flatten the tops slightly.
  11. Cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

For a twist, you can add nuts or dried fruits. Chill dough for better cookie shape.
