Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh raspberries
- 1/4 cup raspberry puree
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Layer half of the cream cheese mixture over the crust, then drizzle with raspberry puree and add half of the fresh raspberries. Repeat the layers.
- Refrigerate for at least 4 hours or until set. Serve chilled.
Notes
Use room temperature ingredients for smoother blending and whip the cream properly to avoid graininess. Chill the pan before assembling for better results.
