Description

A delightful pumpkin bread that captures the essence of fall with warm spices and rich pumpkin flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the streusel:
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon pumpkin spice
  • 3 tablespoons cold butter, cut into pieces
  • For the glaze:
  • 1/2 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon milk


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.
  3. Mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, maple syrup, eggs, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients, stirring gently until just combined. Fold in the nuts if desired.
  5. Combine the brown sugar, flour, pumpkin spice, and cold butter for the streusel topping until crumbly.
  6. Pour the batter into the prepared loaf pan and sprinkle the streusel on top.
  7. Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  8. Whisk together the glaze ingredients until smooth and drizzle over the cooled bread before serving.

Notes

Use fresh pumpkin puree for best flavor. Don’t overmix the batter. Allow the bread to cool properly for best results.
