Mini Breakfast Quesadillas

Description

Delightful mini quesadillas filled with fluffy eggs, melted cheese, and crispy bacon, perfect for busy mornings.


Ingredients

  • 4 large Eggs
  • 4 (6-inch) Small Flour Tortillas
  • 4 Tbsp Bacon Bits (divided)
  • 1 cup Cheddar Cheese (grated)
  • 8 Tbsp Canola Oil (divided)


Instructions

  1. Heat 4 tablespoons of canola oil in a non-stick skillet over medium-high heat.
  2. Crack the eggs into the hot skillet.
  3. Fry the eggs for approximately 1 minute per side, or until desired doneness.
  4. Remove the cooked eggs from the skillet and set aside.
  5. Wipe out the skillet if necessary and add 2 to 4 tablespoons of canola oil. Heat the oil over medium heat.
  6. Place two of the flour tortillas into the skillet to lightly toast.
  7. Flip each tortilla over once one side is lightly golden and slightly crisp.
  8. Top one half of each toasted tortilla with 1/4 cup of grated cheddar cheese.
  9. Sprinkle 1 heaping tablespoon of bacon bits evenly over the cheese on each tortilla.
  10. Carefully place one fried egg on top of the bacon bits.
  11. Fold the other half of each tortilla over the filling.
  12. Toast the folded quesadillas for about 30 seconds per side until the cheese is melted and gooey.
  13. Remove the first batch of quesadillas from the skillet and repeat the process with the remaining tortillas.
  14. Serve the hot mini breakfast quesadillas immediately with salsa and sour cream.

Notes

Warm tortillas before filling for easier folding. Use freshly grated cheese for better melting.
