Ingredients
- 2 cups cooked shredded chicken
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Tortilla chips or tortillas for layering
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, salt, and pepper.
- In a casserole dish, layer tortillas or crush tortilla chips on the bottom.
- Spread half of the chicken mixture over the chips.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining ingredients.
- Bake in the preheated oven for 30 minutes, or until the cheese is bubbly and golden.
- Let it cool slightly before serving.
