Description

A hearty and flavorful casserole featuring tender chicken, black beans, corn, and cheese, perfect for busy weeknights.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortilla chips or tortillas for layering


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, salt, and pepper.
  3. In a casserole dish, layer tortillas or crush tortilla chips on the bottom.
  4. Spread half of the chicken mixture over the chips.
  5. Sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining ingredients.
  7. Bake in the preheated oven for 30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool slightly before serving.
