Description

A delightful dish combining healthy ingredients with amazing flavors, perfect for a weeknight dinner or a special occasion.


Ingredients

  • Salmon fillets
  • Rice
  • Canned chickpeas
  • Cherry tomatoes
  • Black olives
  • Lemon
  • Oregano
  • Feta cheese
  • Olive oil
  • Salt
  • Pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe pan, add olive oil and heat over medium.
  3. Add rice and toast for 1-2 minutes.
  4. Stir in chickpeas, tomatoes, olives, oregano, and about 1 cup of water. Bring to a simmer.
  5. Place salmon fillets on top of the rice mixture, drizzle with lemon juice, and sprinkle with salt and pepper.
  6. Bake in the preheated oven for 15-20 minutes, or until salmon is cooked through.
  7. Remove from oven and top with crumbled feta cheese before serving.

Notes

Serve with a simple green salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
