Ingredients
- Salmon fillets
- Rice
- Canned chickpeas
- Cherry tomatoes
- Black olives
- Lemon
- Oregano
- Feta cheese
- Olive oil
- Salt
- Pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large oven-safe pan, add olive oil and heat over medium.
- Add rice and toast for 1-2 minutes.
- Stir in chickpeas, tomatoes, olives, oregano, and about 1 cup of water. Bring to a simmer.
- Place salmon fillets on top of the rice mixture, drizzle with lemon juice, and sprinkle with salt and pepper.
- Bake in the preheated oven for 15-20 minutes, or until salmon is cooked through.
- Remove from oven and top with crumbled feta cheese before serving.
Notes
Serve with a simple green salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
