Description

A delightful dish featuring salmon, vibrant vegetables, and zesty lemon, perfect for any day of the week.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste


Instructions

  1. In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper, then sear them for about 4-5 minutes on each side until cooked through. Remove and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute.
  3. Add orzo and vegetable broth (or water), then bring to a boil. Reduce heat and simmer for 10-12 minutes until orzo is tender.
  4. Stir in lemon juice, lemon zest, cherry tomatoes, and parsley.
  5. Serve the salmon on top of the lemon orzo mixture. Enjoy your healthy Mediterranean meal!

Notes

Can add other vegetables like spinach or bell peppers for extra nutrition. Adjust lemon juice to taste.
