A delightful dish combining rich flavors of salmon, garlic, and sun-dried tomatoes in a creamy sauce, perfect for impressing guests or enjoying a romantic dinner at home.
Ingredients
- 3-4 salmon fillets, skin removed
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 3/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken stock, unsalted
- 1/2 cup heavy cream
- 1/3 cup chopped sun-dried tomatoes
- 5 garlic cloves, minced
- 1/2 cup freshly shredded parmesan cheese
- Fresh basil for garnish
Instructions
- Combine seasonings in a small bowl: dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper.
- Rub half of the seasoning mix into both sides of the salmon fillets.
- Heat olive oil in a large skillet over medium-high heat; sear the salmon flesh side down for about 5 minutes on each side, remove and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the same skillet; optionally add a splash of sun-dried tomato oil and sauté for 1-2 minutes.
- Deglaze with chicken stock, scraping up any brown bits.
- Add heavy cream, parmesan cheese, and remaining seasoning mix; combine thoroughly.
- Simmer on medium-low for 10-15 minutes until sauce thickens; adjust seasoning as needed.
- Return salmon to the skillet, spoon sauce over it, and cook for an additional 3-5 minutes.
- Serve hot, garnished with fresh basil.
Notes
Serve with pasta, steamed vegetables, or a light salad. Store leftovers in an airtight container for up to 2 days, reheating gently.
