Description

A delightful dish combining rich flavors of salmon, garlic, and sun-dried tomatoes in a creamy sauce, perfect for impressing guests or enjoying a romantic dinner at home.


Ingredients

  • 3-4 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil for garnish


Instructions

  1. Combine seasonings in a small bowl: dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper.
  2. Rub half of the seasoning mix into both sides of the salmon fillets.
  3. Heat olive oil in a large skillet over medium-high heat; sear the salmon flesh side down for about 5 minutes on each side, remove and set aside.
  4. Add minced garlic and chopped sun-dried tomatoes to the same skillet; optionally add a splash of sun-dried tomato oil and sauté for 1-2 minutes.
  5. Deglaze with chicken stock, scraping up any brown bits.
  6. Add heavy cream, parmesan cheese, and remaining seasoning mix; combine thoroughly.
  7. Simmer on medium-low for 10-15 minutes until sauce thickens; adjust seasoning as needed.
  8. Return salmon to the skillet, spoon sauce over it, and cook for an additional 3-5 minutes.
  9. Serve hot, garnished with fresh basil.

Notes

Serve with pasta, steamed vegetables, or a light salad. Store leftovers in an airtight container for up to 2 days, reheating gently.
