Description

A warm and comforting loaded potato soup that is creamy, cheesy, and perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • Chopped green onions for garnish
  • Cooked bacon bits for garnish (optional)


Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until fragrant.
  2. Add the diced potatoes and broth, and bring to a boil.
  3. Reduce the heat and let simmer until the potatoes are tender, about 15 minutes.
  4. Use a potato masher to mash some of the potatoes for a creamy texture.
  5. Stir in the milk, cheddar cheese, and sour cream.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions and bacon bits if desired.

Notes

For extra creaminess, use half-and-half instead of milk. You can make this soup vegetarian by using vegetable broth and omitting the bacon.
