A warm and comforting loaded potato soup that is creamy, cheesy, and perfect for chilly evenings.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1/2 cup sour cream
- Chopped green onions for garnish
- Cooked bacon bits for garnish (optional)
Instructions
- In a large pot, sauté the chopped onion and minced garlic until fragrant.
- Add the diced potatoes and broth, and bring to a boil.
- Reduce the heat and let simmer until the potatoes are tender, about 15 minutes.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the milk, cheddar cheese, and sour cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions and bacon bits if desired.
Notes
For extra creaminess, use half-and-half instead of milk. You can make this soup vegetarian by using vegetable broth and omitting the bacon.
