Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 4 slices of bacon, cooked and crumbled
- Salt and pepper to taste
- Chives for garnish
Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add the diced potatoes and chicken broth; bring to a boil and then simmer until the potatoes are tender.
- Mash the potatoes slightly for a chunky texture.
- Stir in the milk and cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with crumbled bacon and chives.
Notes
For a thicker soup, blend part of the soup with an immersion blender. Use leftover baked potatoes for added flavor.
