Description

A comforting Loaded Potato Soup filled with rich flavors and creamy texture, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chives for garnish


Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced potatoes and chicken broth; bring to a boil and then simmer until the potatoes are tender.
  3. Mash the potatoes slightly for a chunky texture.
  4. Stir in the milk and cheddar cheese until melted.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crumbled bacon and chives.

Notes

For a thicker soup, blend part of the soup with an immersion blender. Use leftover baked potatoes for added flavor.
