Description

Transform leftover mashed potatoes into delightful cheese puffs that are crispy on the outside and soft on the inside.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped green onions (optional)
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying (or cooking spray if baking)


Instructions

  1. Preheat your oven to 400°F (200°C) if baking. Grease a baking sheet or line it with parchment paper.
  2. In a mixing bowl, combine the leftover mashed potatoes, shredded cheese, flour, chopped green onions, and egg. Mix until well combined.
  3. Season with salt and pepper to taste.
  4. Scoop out portions of the mixture and form them into small balls or patties.
  5. If baking, place them on the prepared baking sheet, spray with cooking spray, and bake for 20-25 minutes until golden and crispy. If frying, heat oil in a pan and fry the puffs until golden brown on all sides.
  6. Drain on a paper towel and serve warm.

Notes

Ensure mashed potatoes are thick for best results. Experiment with different cheeses and spices.
