Transform leftover mashed potatoes into delightful cheese puffs that are crispy on the outside and soft on the inside.
Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 cup all-purpose flour
- 1/4 cup chopped green onions (optional)
- 1 egg
- Salt and pepper to taste
- Oil for frying (or cooking spray if baking)
Instructions
- Preheat your oven to 400°F (200°C) if baking. Grease a baking sheet or line it with parchment paper.
- In a mixing bowl, combine the leftover mashed potatoes, shredded cheese, flour, chopped green onions, and egg. Mix until well combined.
- Season with salt and pepper to taste.
- Scoop out portions of the mixture and form them into small balls or patties.
- If baking, place them on the prepared baking sheet, spray with cooking spray, and bake for 20-25 minutes until golden and crispy. If frying, heat oil in a pan and fry the puffs until golden brown on all sides.
- Drain on a paper towel and serve warm.
Notes
Ensure mashed potatoes are thick for best results. Experiment with different cheeses and spices.
