Ingredients
- 1 cup cornmeal
- 1 cup sweet corn (canned or frozen)
- 1/2 cup diced jalapenos

- 1 cup buttermilk
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a mixing bowl, combine cornmeal, sweet corn, diced jalapenos, and shredded cheese.
- In another bowl, whisk together buttermilk and egg.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides.
- Remove and drain on paper towels.
