Description

Ingredients

  • 1 cup cornmeal
  • 1 cup sweet corn (canned or frozen)

  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup buttermilk
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying


Instructions

  1. In a mixing bowl, combine cornmeal, sweet corn, diced jalapenos, and shredded cheese.
  2. In another bowl, whisk together buttermilk and egg.
  3. Pour the wet mixture into the dry ingredients and stir until just combined.
  4. Heat oil in a frying pan over medium heat.
