Description

Deliciously soft cookies filled with luscious peach preserves, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 cup peach preserves
  • 1 teaspoon cinnamon


Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In another bowl, combine the flour, baking powder, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients until a dough forms.
  2. Form and Bake Cookies: Preheat your oven to 350°F (175°C). Scoop tablespoon-sized portions of the dough and roll them into balls. Place the balls on a baking sheet lined with parchment paper, leaving some space in between each one. Use your thumb or the back of a measuring spoon to create a small indentation in each cookie. Fill these indentations with peach preserves. Bake for about 15-20 minutes or until the edges begin to turn golden brown. Allow them to cool before serving.

Notes

Ensure butter and eggs are at room temperature for better dough consistency. Don’t overmix the dough to avoid tough cookies.
