Description
Tender, buttery huckleberry shortbread bars with a melt-in-your-mouth texture and bursts of sweet-tart berry flavor. A simple, elegant dessert perfect for any occasion.
Ingredients
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, cold and cubed
1 large egg yolk
1/2 teaspoon vanilla extract
Pinch of salt
1 large egg white
1 teaspoon water
1/2 cup huckleberries (fresh or frozen, unthawed if frozen)
1-2 tablespoons additional sugar (optional)
Instructions
Preheat oven to 350°F (175°C)
Line an 8×8 inch baking pan with aluminum foil with overhang
Lightly spray the foil with baking spray
In a food processor, combine flour, sugar, cold butter, egg yolk, vanilla, and salt. Pulse until homogenous crumbs form
Press half of the mixture evenly into the prepared pan
Evenly distribute huckleberries over the base
Sprinkle optional additional sugar over the berries
Roll remaining dough into a ball, flatten into a disc
Cut into 8 even strips
Place pastry cutter in the middle of each strip to create egg washer holes
Brush each hole with egg white-water wash
Bake for 25-30 minutes until golden brown
Cool completely before lifting with foil and slicing into bars
Notes
Use cold butter for optimal crumb texture
Freeze dough if not using immediately
For optional topping sugar, increase sweetness as desired
Best stored in airtight container at room temperature
