Ingredients

  • 2 lbs ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2-3 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Toppings: Shredded cheese, sour cream, green onions, avocado slices, tortilla chips (optional)


Instructions

  1. Gather and prepare all your ingredients. Dice the onion and green pepper, mince the garlic, and drain the beans.
  2. In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat if necessary.
  3. Add the diced onion, bell pepper, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Cook for another minute to awaken the spices.
  5. Pour in the diced tomatoes and tomato sauce, followed by the beef broth. Stir well to combine.
  6. Bring the chili to a boil, then reduce the heat. Let it simmer for at least 30 minutes, allowing the flavors to meld.
  7. Stir in the kidney beans and pinto beans. Simmer for an additional 10 minutes, so the beans heat through.
  8. Taste your chili and adjust seasoning if needed. Add more chili powder for heat or more salt for flavor.
  9. Ladle the hot chili into bowls and top with your favorite toppings.

Notes

For better flavor, let the chili sit for a few hours or overnight. Adjust thickness by adding more broth for a soupier chili.
