Description

A classic, hearty chili made with ground beef, beans, and spices, perfect for busy weeknights or cozy weekends.


Ingredients

  • 1 lb ground beef
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 cups beef broth
  • Olive oil for sautéing


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  2. Add minced garlic to the pot and cook for 1-2 minutes until fragrant.
  3. Add ground beef, breaking it up as it cooks. Cook for 5-7 minutes until browned. Drain excess fat if needed.
  4. Add chili powder, cumin, smoked paprika, and cayenne pepper. Stir well to coat the beef and onions with spices. Cook for 1-2 minutes.
  5. Stir in tomato paste and cook for 2-3 minutes to thicken.
  6. Pour in diced tomatoes, beef broth, and salt and pepper to taste. Stir to combine, bring to a simmer.
  7. Lower heat and let simmer for 20-25 minutes, stirring occasionally.
  8. Add kidney beans and black beans. Stir and let simmer for another 10-15 minutes to heat through and meld flavors.
  9. Taste and adjust seasoning as needed, adding more broth for desired consistency.
  10. Serve hot, topped with your favorite toppings.

Notes

Customize your chili by adding vegetables like peppers or corn. For thicker chili, reduce beef broth or simmer longer.
