Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 2 to 3 cloves garlic, minced
- 3 to 4 cups potatoes, peeled and diced small
- 2 medium carrots, diced (optional)
- 3 cups broth (beef or chicken)
- 2 cups milk or half and half
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons flour
- Salt and pepper to taste
- Optional toppings: bacon bits, diced pickles, green onions, extra cheese
Instructions
- Brown the beef in a large pot over medium heat until no longer pink. Add the onion and cook until softened, then stir in garlic.
- Add the diced potatoes and carrots, then pour in the broth. Bring to a gentle boil, reduce heat, and simmer until potatoes are fork-tender, about 12 to 15 minutes.
- Make a quick paste by melting butter in a small pan and whisking in flour; cook for 1 minute, then whisk in a splash of milk. Pour into the soup and stir.
- Pour in the rest of the milk or half and half, keeping the heat low. Add cheese in small handfuls, stirring until melted and smooth. Season to taste with salt and pepper.
- Ladle into bowls and top with your choice of toppings like green onions, bacon bits, or diced pickles.
Notes
For extra flavor, add a small squeeze of ketchup or a spoon of mustard. If you want a thicker soup, mash some potatoes against the pot’s side before adding cheese.
