Description

Tropical flavors meet savory stir-fry in this halal-friendly Hawaiian fried rice. Charring garlic and veggies with soy-sesame oil infused tofu elevates traditional pineapple fried rice to new island heights.


Ingredients

4 Tablespoons low sodium soy sauce
1/2 Tablespoon sesame seed oil
1 teaspoon hot sauce
1 Tablespoon vegetable oil, divided
1 red bell pepper, diced
2 cups tofu blocks, diced
2 green onions, diced
3 cloves garlic, minced
5 cups cold cooked rice
3 large eggs
1 cup pineapple pieces


Instructions

In a small bowl, combine soy sauce, sesame oil, and hot sauce
Heat 1/2 tablespoon vegetable oil in a non-stick skillet over medium heat
Sauté garlic and bell pepper for 2 minutes
Add tofu cubes and garlic sauce base, turn to coat for 3 minutes
Push vegetables to the side, add remaining 1/2 tablespoon oil and scramble eggs in space
Toss cold rice into skillet, breaking apart clumps
Add pineapple pieces last, stir until heated through
Sprinkle with green onions before serving

Notes

Use day-old rice for best texture
Adjust hot sauce to taste

Sativate rice in fridge 30 minutes if freshly cooked
