Description

Delicious and satisfying Greek Chicken Bowls filled with fresh ingredients and flavorful marinated chicken, perfect for meal prep.


Ingredients

  • 1 lb chicken breast
  • 2 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
  2. Grill the chicken: Cook the marinated chicken on a grill or grill pan over medium heat until fully cooked, about 6-7 minutes per side. Let it rest before slicing.
  3. Prepare the tzatziki sauce: Combine Greek yogurt, diced cucumber, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well to create a refreshing sauce.
  4. Assemble the bowls: In a serving bowl, add a scoop of rice or quinoa as the base. Top with sliced grilled chicken, diced veggies (cucumber, bell pepper, cherry tomatoes, red onion), feta cheese, olives, and parsley. Drizzle with the homemade tzatziki sauce.
