Description

A classic creamy potato salad recipe that brings family and friends together, perfect for barbecues and picnics.


Ingredients

  • 2 pounds Yukon Gold potatoes (peeled and chopped)
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1/2 cup celery (chopped)
  • 1/4 cup onion (chopped)
  • 3 pieces hard-boiled eggs (chopped)
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 1 tablespoon parsley (chopped)


Instructions

  1. Boil the potatoes in salted water until they are fork-tender. Drain and cool slightly.
  2. In a bowl, mix the mayonnaise, mustard, and vinegar until smooth.
  3. Add the celery, onion, and eggs to the mixture. Gently fold in the cooled potatoes.
  4. Season with salt and pepper, sprinkle with parsley, and chill before serving.

Notes

Choose Yukon Gold potatoes for best results. Allow to chill for a couple of hours to let flavors meld.
