Ingredients
- 4 large flour tortillas
- 8 oz cream cheese, softened (or hummus for a vegan option)
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup bell peppers, sliced (red, yellow, or green)
- 1 cup spinach or mixed leafy greens
- ½ cup red onion, thinly sliced (optional)
- Salt and pepper to taste
- Optional: fresh herbs for added flavor (like dill or basil)
Instructions
- Begin by laying out your tortillas on a clean, flat surface.
- In a mixing bowl, combine the softened cream cheese with a pinch of salt and pepper. If using, mix in fresh herbs at this point.
- Spread a generous layer of the cream cheese mixture onto each tortilla, ensuring even coverage right to the edges.
- Layer the shredded carrots, sliced cucumbers, bell peppers, spinach, and red onion (if using) evenly over each tortilla.
- Carefully roll each tortilla tightly from one end to the other while pressing the filling in as you go.
- Once rolled, use a sharp knife to slice each tortilla into approximately 1-2 inch pieces.

Notes
Chilling the rolled tortillas for about 30 minutes before slicing helps to firm them up, making them easier to cut.
