  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1 cup spinach or mixed leafy greens
  • ½ cup red onion, thinly sliced (optional)
  • Salt and pepper to taste
  • Optional: fresh herbs for added flavor (like dill or basil)


Instructions

  1. Begin by laying out your tortillas on a clean, flat surface.
  2. In a mixing bowl, combine the softened cream cheese with a pinch of salt and pepper. If using, mix in fresh herbs at this point.
  3. Spread a generous layer of the cream cheese mixture onto each tortilla, ensuring even coverage right to the edges.
  4. Layer the shredded carrots, sliced cucumbers, bell peppers, spinach, and red onion (if using) evenly over each tortilla.
  5. Carefully roll each tortilla tightly from one end to the other while pressing the filling in as you go.
