Description

A delightful and comforting chowder combining fresh corn, hearty potatoes, and savory bacon, perfect for any time of the year.


Ingredients

  • 4 cups fresh corn kernels
  • 4 slices bacon, diced
  • 1 medium onion, chopped
  • 2 cups diced potatoes
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or parsley for garnish


Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion to the pot and sauté until softened.
  3. Stir in the diced potatoes and corn, cooking for a few minutes.
  4. Pour in the broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Use an immersion blender to blend the soup until smooth, or leave some chunks for texture.
  6. Stir in the heavy cream and cooked bacon, and season with salt and pepper.
  7. Serve hot, garnished with chives or parsley.

Notes

Use fresh corn for best flavor, but frozen corn can be used. For a thicker chowder, increase potatoes or reduce broth.
