A delightful and comforting chowder combining fresh corn, hearty potatoes, and savory bacon, perfect for any time of the year.
Ingredients
- 4 cups fresh corn kernels
- 4 slices bacon, diced
- 1 medium onion, chopped
- 2 cups diced potatoes
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives or parsley for garnish
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the chopped onion to the pot and sauté until softened.
- Stir in the diced potatoes and corn, cooking for a few minutes.
- Pour in the broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
- Use an immersion blender to blend the soup until smooth, or leave some chunks for texture.
- Stir in the heavy cream and cooked bacon, and season with salt and pepper.
- Serve hot, garnished with chives or parsley.
Notes
Use fresh corn for best flavor, but frozen corn can be used. For a thicker chowder, increase potatoes or reduce broth.
