Crispy, golden veggie patties with shredded zucchini, grated carrots, and aromatic herbs. Baked or pan-fried to perfection, these fritters are a quick, healthy side or snack with a tender center and satisfying crunch.
Ingredients
2 medium zucchini, grated on coarse blade
2 large carrots, grated
1/2 cup all-purpose flour or chickpea flour
1 large egg, room temperature
2 cloves garlic, minced
1 tsp Old Bay seasoning or substitute
2 tbsp olive oil for sautéing
Instructions
Grate zucchini and carrots on coarse blade. Mix with flour, egg, garlic, Old Bay, and salt.
Heat olive oil in skillet over medium. Cook garlic and ginger 30 seconds until fragrant.
Spoon 1/4-cup mixture into skillet. Flatten with spatula. Cook 3 minutes per side until golden.
Let fritters rest 5 minutes on rack. Serve warm with lemon-rice vinegar dressing.
Notes
Add 1/4 tsp baking powder to garam masala for extra lift.
Use nonstick skillet to reduce oil to 1 tbsp if baking.
Sprinkle sesame seeds atop fritters for visual contrast.
For frying, use a medium-high heat to avoid burning.
