Description

Delightful cookies that are soft, chewy, and packed with warm spices, perfect for fall and any occasion.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the pumpkin puree, sugar, and softened butter.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the flour mixture to the pumpkin mixture, blending until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes
